Here are five vegetables you should try not to peel to get the most out of them:

Potato

Many of us peel potatoes, but you might want to stop! Potato skins are full of fibre, vitamins, and minerals. In fact, most of the fibre in a potato is found in its skin. 

The skin also has more potassium than the inside of the potato, which is great for your heart and muscles. Plus, it has iron, which helps your red blood cells work well.
